Asam Pedas Tumis (or simply Asam Pedas) is a Malaysian dish, common to the Malacca area, that is a stew of fish with tamarind, chilies, shallots, garlic, ginger, lemongrass, and other spices. It is noteworthy for the step of sautéeing the spice paste before the addition of other ingredients, giving it a deep and complex flavor.
