Babi guling is a traditional Balinese dish consisting of a whole pig that is spit-roasted over an open fire. The pig is typically stuffed with a mixture of spices, including turmeric, garlic, ginger, lemongrass, and chili, as well as herbs and makrut lime leaves. The skin is rubbed with turmeric to achieve a vibrant color.
The slow roasting process, which can take several hours, results in a crispy, golden-brown skin and tender, flavorful meat. Babi guling is commonly served with steamed rice, vegetables, and a spicy sambal, and it is often prepared for special occasions, religious ceremonies, and communal gatherings in Bali.
