Chonggak kimchi (총각김치) is a traditional Korean kimchi made with young ponytail radishes, known as chonggakmu. The radish, distinguished by its attached leafy stems, is salted and then seasoned with a mixture typically including gochugaru (Korean red chili powder), garlic, ginger, fish sauce or fermented shrimp (saeujeot), and sometimes glutinous rice paste.
Historically, chonggak kimchi was popular among celibate young men, from which its name is derived, as "chonggak" refers to a bachelor.
The dish is commonly enjoyed as a banchan (side dish) in Korean cuisine.
