Cibreo is a dish from Florence, in Italy, made with cockscomb, chicken organs (kidneys, hearts, and liver), and chicken testicles. While it is almost unknown today, it was once a prized dish for the elite of the city, including Catherine de' Medici.
For other haute cuisine dishes with cocks' combs, see à la Financiere and Tournedos Marguery.
