Cracked wheat is whole grain wheat that has been cracked, ground, or crushed to break it into smaller pieces. It is not the same as bulgur, which has been steamed, toasted, and then ground or crushed.
Cracked wheat takes longer to prepare, has a shorter shelf life, and has a more neutral flavor. It is not a substitute for bulgur.
