Gajar barfi is an Indian sweet pudding made with carrots. It is made by simmering grated carrots with milk (or sometimes milk powder), sugar, and, optionally, grated coconut. Spices, especially cardamom, and nuts are sometimes added.
Compare gajar ka halwa, a similar carrot-based pudding. Gajar barfi is usually made with more binding agents and cooked to a firmer, more sliceable texture, which also gives it a longer shelf life.
