Iwakunizushi, or Iwakuni sushi, is a type of sushi from Iwakuni City, in Yamaguchi Prefecture, Japan. It is prepared by making as many as five layers of cooked vinegared rice and fish or other ingredients, which are pressed, and then sliced into squares which are topped with flavorful condiments.
