Jaggery is a traditional cane sugar made in South and Southeast Asia, from Pakistan to Indonesia. It is made with concentrated cane juice, and often date or palm sap, without separation of molasses, which gives it a characteristic golden brown color and a flavor that can include notes of maple syrup, caramel, and molasses. It is similar to the products known elsewhere in the world as panela, piloncillo, and rapadura.
