Maque choux is a spicy stewed corn dish from the American state of Louisiana, which is a blend of Native American, Creole and Cajun influences. It typically contains whole corn kernels, green bell peppers, onion, garlic, celery, and, usually, bacon or another cured pork product. If it is to be used as a main dish, sausage or shrimp are often added.
