Mool yut (물엿), also mulyeot, is a traditional Korean liquid sweetener made primarily from grains such as rice, barley, or corn. It is a type of malt syrup, with a texture similar to light corn syrup and a mild sweetness. Mool yut is commonly used in Korean cooking to add sweetness and gloss to dishes, as well as to improve the texture of sauces and marinades.
It is particularly popular in making dishes like galbi (grilled short ribs) and various Korean stir-fries, where it helps achieve a sticky glaze. The syrup is also used in confectionery and traditional Korean sweets, such as yakgwa (honey cookies). While it shares similarities with Western corn syrup, mool yut has a distinct flavor profile and is an essential ingredient in many Korean recipes, contributing both sweetness and a smooth consistency.
