Bergamot essential oil is a fragrant oil extracted from the rind of the bergamot orange (Citrus bergamia). The oil is obtained through cold-pressing the peel of the nearly ripe fruit and is known for its distinctive, slightly bitter, floral aroma.
In culinary history, bergamot essential oil is most notably used to flavor Earl Grey tea, imparting its signature aroma and taste. While generally not consumed directly due to its potency and the presence of potentially phototoxic compounds like bergapten, it is used in very small quantities to add fragrance to some desserts and confections. Bergamot essential oil also forms part of traditional Italian and Mediterranean culinary preparations, mostly as an ingredient in liqueurs, marmalades, and candied peels.
