Victoria sponge cake, or Victoria sandwich cake, is a British cake, based on a chemically leavened pound cake base, which is always served layered with jam and cream. It was a favorite dish of Queen Victoria. Note that a Victoria sponge is not a true sponge cake, due to the inclusion of a fat (typically butter) in the batter.
