Ashta, sometimes written as qishta, kishta, or kashta, or kaymak, or sarshir, is a dairy product made across the Middle East, Iran, and Pakistan, used in sweet pastry dishes, as a spread with bread, or as an ingredient in savory dishes. It is a sweet milk curd, typically made by heating milk with bits of bread or a corn starch thickener, which is sweetened and aromatized with orange blossom water and rose water.
