Cecina Enchilada is a Oaxacan preparation of thinly sliced pork, covered with chili paste, which is hung to dry. It can be used as a main dish or as a filling for enchiladas and tacos.
Cecina is the Spanish term for dried meat; contrast Cecina de León.
