The Natchitoches meat pie (pronounced NAK-a-dush) is a regional fried meat pie from northern Louisiana, United States. It is one of the official state foods of Louisiana.
While it is often associated with Cajun cuisine today, Natchitoches is north of the traditionally Cajun area of Louisiana. The pies probably date to the complex early history of the region. French and Acadian immigrants probably brought the beef-and-pork filling tradition, which may have mixed with the empanadas made by Latino settlers, and freed creoles of color brought Creole seasoning and deep-fat frying techniques.
