Parmesan is a hard, aged Italian cow's milk cheese, sometimes also called Parmagiano-Reggiano or simply Parmagiano. In the EU, "Parmesan" and "Parmagiano-Reggiano" have protected designation of origin (PDO) status and can only be used for cheeses produced in those provinces. Outside the EU, "Parmesan" can be used for cheeses produced in a similar style, but "Parmagiano-Reggiano" still has PDO status.
