Ratafia liqueur is an alcoholic liqueur or cordial made by infusing stone fruit pits, citrus peels, herbs, and spices in alcohol, and sweetening the resulting beverage. The stone fruit pits contribute a bitter almond flavor, similar to that produced in almond extract. The liqueur is characteristic of the Mediterranean regions of Spain and Italy, as well as the northeast corner of France, near Champagne and Burgundy.
Brands of ratafia include Lazzaroni Amaretto, Luxardo Albicocca, Kahlua, Heering Original Cherry Liqueur, Alpenz Saint Elizabeth Allspice Dram, Carlshamms Flaggpunsch, and Seale John D. Taylor's Velvet Falernum.
