Rava dosa is a type of South Indian crepe distinguished by its use of semolina flour (called rava or suji) instead of the traditional fermented rice and urad dal (black gram bean) batter found in classic dosa.
It is a relatively modern style of dosa, and, because it does not require fermentation or grinding, it has a shorter preparation time.
Rava dosa batter typically includes semolina, rice flour, and all-purpose flour, mixed with water, yogurt, and spices such as cumin seeds, black pepper, chopped chilies, ginger, and curry leaves. Like classic dosa, it is ladled directly onto a hot griddle, cooking quickly to form a lacy, crisp texture.
Rava dosa is commonly served as a breakfast or snack dish accompanied by chutney and sambar.
