Chhena are cheese curds produced in India, Bangladesh, and Nepal from water buffalo or cow milk, through an acid coagulation technique. The whey produced by this process is therefore an acid whey.
Chhena is used to make paneer, the staple Indian cheese, as well as many sweets including chhena jalebi, chhena gaja, chhena poda, pantua, rasgulla, and sandesh.
