Plov or palov is an Uzbek rice dish, the local variation of pilaf. It is a dish of rice cooked in a stew of meat (usually mutton), onions, and other vegetables, possibly including eggs, barberries, beans, and fruits. It would traditionally be cooked in a kazan pot over an open fire, or possibly a deghi.
